Description

A super easy cobbler recipe with a sweet semi-homemade cream topping.

Ingredients

  • FOR THE COBBLER:
  • 2 cups Chopped Granny Smith Apples
  • 1-½ cup Sugar, Divided
  • 1 cup Water
  • ½ cups Milk
  • ½ cups Self-Rising Flour
  • 4 Tablespoons Butter, Melted
  • _____
  • FOR THE CINNAMON VANILLA CREAM:
  • 1 cup Whipped Cream
  • ½ teaspoons Vanilla Extract
  • ½ teaspoons Ground Cinnamon

Preparation

For the cobbler:

Preheat oven to 350ºF.

Place chopped apple, 1 cup of sugar and water in a small sauce pan. Bring to a boil, then lower heat and simmer for about 10 minutes. Meanwhile, whisk together remaining sugar, milk, flour and butter until well blended. Spray two small baking dishes, such as a ramekin, with non-stick spray and pour an even amount of batter into each dish. Do not stir. Tap dishes on a hard surface just enough to help it settle and smooth out.

Spoon apples and simple syrup on top of the batter, distributing evenly between the two servings. Still do not stir; the batter will rise to the top while baking. Sprinkle the top of each cobbler with a pinch of sugar. Place ramekins in a larger baking dish filled with about 1/2 inch of water. Bake for 30–45 minutes.

For the cinnamon-vanilla cream:

In a small bowl mix whipped cream, vanilla and cinnamon together until blended well. Top cobblers with whipped cream and serve.

You can double all of the ingredients and prepare one large cobbler in about an 8×8 baking dish. The cooking time and temperature would remain the same as mentioned above.
