Description

This is what happens if Cobbler and Cake have a baby—they get Cobbler Cake.

Ingredients

  • APPLE FILLING:
  • 6 whole Granny Smith Apples
  • ½ cups Sugar
  • 1 teaspoon Ground Saigon Cinnamon
  • 1 teaspoon Lemon Juice
  • 1 Tablespoon Cornstarch
  • _____
  • Crust
  • 1 cup Cake Flour
  • 1 cup Sugar
  • ½ cups Melted Butter
  • ½ cups Whole Milk
  • Ground Saigon Cinnamon, To Sprinkle On Top

Preparation

Filling:

1. Wash all of your apples in vegetable wash and dry with a paper towel.

2. Cut the apples in large chunks, making sure not to use the hard core in the middle. Place all of the apples in a 3-quart pot.

3. Add 1/2 cup sugar, 1 teaspoon cinnamon, lemon juice and cornstarch to the apples.

4. Stir the filling ingredients together and let cook on medium heat for 20 minutes until soft. Make sure to stir about every 5 minutes to keep from burning; they will have a nice glaze from the cornstarch.

5. Once cooked, set aside to cool.

6. Get out a metal 8×8 pan and spray with cooking spray.

7. Pour apples into the pan and spread out evenly with a rubber spatula.

Crust:

1. Mix flour, sugar, melted butter and milk in large bowl.

2. Mix together with a whisk until smooth and creamy. The batter will be thick, not runny.

3. Pour the batter onto the top of the apple mixture and spread it evenly with a rubber spatula.

4. Sprinkle the top of the batter with Saigon cinnamon.

5. Bake at 350 degrees for 25 minutes. It will be golden brown on top when done.

6. Once cooked, let cool for a few minutes and put on a plate with ice cream or Cool Whip. Enjoy!

This was just okay, I wouldn’t make it again. It took about 40 minutes to bake, instead of the 25 min listed in the recipe.

May I ask what is Saigon cinnamon? Sounds awesome!

This was super yummy and very, very easy to make. However, it took nearly an hour to cook, rather than the 25 minutes the recipe indicates.

The cobbler “cake” part of this dish is exceedingly sweet when made according to the recipe. The cake part was more dense then I was expecting, and the cinnamon overwhelmed the flavor of the apples. Won’t be making this one again.

Really good! Icut the sugar in half in both the apples and the cake and the recipe still turned out great. Would recommend this for the fall when apples are at their peak. Yum!
