Description

Tender cake topped with fresh apples, cinnamon and streusel make for a delicious after school snack or anytime. Also a great way to use up those not so perfect apples.

Ingredients

  • FOR THE APPLES:
  • 4 whole Small Tart Apples Cored, Peeled And Cut Into 1/4" Pieces
  • ½ cups Sugar
  • 1 Tablespoon Flour
  • ½ teaspoons Cinnamon
  • 3 Tablespoons Lemon Juice
  • ½ cups Water
  • FOR THE STREUSEL:
  • ¾ cups Sugar
  • ½ cups Flour
  • 1 pinch Salt
  • 1 teaspoon Cinnamon
  • 5 Tablespoons Butter, Softened
  • FOR THE CAKE:
  • 2 cups All-purpose Flour
  • ½ cups Sugar
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • 4 Tablespoons Unsalted Butter, melted
  • 1 whole Egg, Slightly Beaten
  • 1-⅓ cup Milk

Preparation

1) For the apples. Place the prepared apples into a medium size sauce pan and add the sugar, flour, and cinnamon. Mix to evenly coat the apples. Add the lemon juice and water. Cook over medium-low heat for 8-10 minutes, stirring often to prevent sticking. Add a little more water if it’s too thick. Remove from heat and set aside or refrigerate if using the next day.
2) For the streusel. Add all of the streusel ingredients into a small mixing bowl and blend together using your fingers until you get a nice crumbly mixture. Refrigerate in an airtight container if using the next day. Otherwise, set aside.
3) For the cake. Preheat the oven to 350F. Generously coat a 9×13″ baking pan with cooking spray and set aside. Add the flour, sugar, baking powder and salt into a large mixing bowl. Stir to blend. Make a well in the center of the ingredients.
4) Add all of the wet cake ingredients into the well. Mix until the dry ingredients are incorporated, do not over mix.
5) Pour the batter into the prepared baking pan. Evenly top with the cooked apple mixture. Top evenly with the streusel topping. Bake for 30-35 minutes. Stick a toothpick into the center – it should come out clean when it’s done. Allow to cool for at least 15 minutes before serving. Cover and refrigerate leftovers. Makes 12 servings.

My family and I couldn’t resist our temptation to dive into this tonight. One word my three year old son said as he had his first bite was “yum-o” mommy. This really brought back to my years spent in Germany, where they would make a delicious sweet apfel kuchen (Apple cake). I’m happy to report that my kids and hubby are looking forward to breakfast tomorrow,thanks.
