Description

With only six ingredients this apple cake is a great holiday quick dessert.

Ingredients

  • 3  Eggs, Room Temperature
  • ¾ cups Sugar
  • 6 Tablespoons Unsalted Butter, Softened
  • 2-¾ cups Self-Rising Flour
  • 3  Apples, Peeled, Cored And Diced (I Used Fuji)
  • Dusting Of Powdered Sugar

Preparation

Preheat oven to 350 F. Grease an 8″ cake pan.

In a large bowl whisk eggs and sugar until pale and fluffy, then beat in butter until combined. Stir flour into the mix and once it’s partially mixed in then add apples. Mix till just combined (do not over mix). Pour into the preapred pan and bake for 40-45 minutes.

Remove pan from the oven and let cake cool in the pan. When cool turn the cake out onto a cake stand or plate. Dust with powdered sugar.

I made this today and what a hit! A better name would be Quick Apple Biscuit Cake! It is a little salty, with sweet apples,and not too sweet. So fast and easy to mix! (I made my own self-rising flour with all-purpose flour, baking powder and salt.) A terrific after school, midafternoon treat with a glass of milk.
