A light moist cake topped with fresh tart apples and a sprinkle of crunchy sugar on top! The perfect fall dessert.
First heat the oven to 350ºF. Line a small sheet pan with parchment paper. Spray with nonstick spray.
In a large bowl, cream the butter and 1 cup sugar together. Blend in the eggs and stir well. Add the flour and baking powder. Mix until a stiff dough forms.
Add the milk slowly and stir until a heavy creamy batter forms. Spread the batter on the prepared sheet pan. Top the batter with the sliced apples.
Bake for 40-45 minutes or until an inserted toothpick comes out clean. During the last 10 minutes of baking, sprinkle the top of the cake with the remaining ¼ cup of sugar and finish baking.
Serve as is or with a big scoop of vanilla ice cream.

Ooooh, this sounds like something my mom used to make! I think she poured a cream/cinnamon/sugar mixture over the top instead of the sugar sprinkle. Thanks for the recipe!
