Description

When I think of summer I think first and foremost of strawberry shortcake! I don’t think that’s normal . . . but you will love this super easy and crowd-pleasing dessert!

Ingredients

  • 1 pint Whipping Cream
  • ¾ cups Powdered Sugar, Or To Taste
  • 1 whole Prepared Angel Food Cake (I Buy It Pre-made To Save Myself Oven Time)
  • 2 pounds Fresh Strawberries
  • 1 pint Fresh Blueberries
  • 4 Tablespoons Granulated Sugar (or To Taste)

Preparation

First pour your whipping cream into a mixing bowl and, using an electric mixer, beat until the cream starts to thicken up slightly. Add in your powdered sugar and give it a quick stir. Beat the mixture until you have light and fluffy whipped cream, then refrigerate it. Of course you can always just buy whipped cream already made in the can!

Prepare your strawberries and blueberries by rinsing them, then hull and slice your strawberries. Add the granulated sugar to the strawberries. The longer you let the berries sit with the sugar, the better they will be on the shortcake!

Cut up the angel food cake into 1/2″ squares. Next, put a small teaspoon of whipped cream on the bottom of your serving jars (or your prepared serving dish). Top that layer with angel food cake squares, followed by strawberries and blueberries. Repeat the layers until you’ve reached the tops of the jars…then put on the lids and refrigerate until you’re ready to eat!
