Description

These are super soft pumpkin cookies and the key ingredient are the cinnamon chips.

Ingredients

  • 4 cups Flour
  • 2 cups Quick Oats
  • 2 teaspoons Baking Soda
  • 2 teaspoons Cinnamon
  • 1 teaspoon Salt
  • 1-½ cup Butter
  • 1-¼ cup Brown Sugar
  • 1 cup Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 15 ounces, weight Canned Pumpkin
  • 2 cups Cinnamon Chips (or Chocolate Chips)

Preparation

Mix the flour, quick oats, baking soda, cinnamon, and salt together in a bowl. Cream the butter, brown sugar, and sugar in a separate, larger bowl. Add the egg, vanilla, and pumpkin to the creamed mixture. Then, add the dry ingredient mixture.

Mix in the 2 cups of cinnamon chips.

Scoop tablespoonfuls of dough and place them on a cookie sheet. Bake at 350 degrees for 20 to 25 minutes.

This makes a ton of cookies!

My mom has a recipe almost identical to this one that she’s been making since I was a kid. These cookies have been my favorite for years…in fact, I just made them again this week. We’ve never used cinnamon chips, though, but it sounds amazing. I added fresh minced ginger and finely minced apple once, which tasted great but the apple may have contributed too much liquid to the recipe.
And, yes, I second that the recipe makes a ton of cookies!

These were very good. They are more like a muffin/cake texture than cookie per say. But my family loved them!
