Wonderful cake! Very easy to make and always a crowd pleaser. I couldn't locate coconut pudding mix so I used vanilla instead. For the yellow cake I used a gluten free cake mix. Tasted great!

This is delish! I couldnt find coconut pudding mix, so I used cheesecake flavored pudding mix that was sugar and fat free. It came out very good. It does make a lot of frosting, so next time I will make this as a layer cake with frosting between the layers and on the sides.

This was fabulous! I used a white cake mix since that's what I had on hand (one of the ones with pudding in the mix, so it was extra moist). My grocery store didn't have coconut flavored pudding for the frosting, so I used vanilla instead, and folded in 1 c. of sweetened flaked coconut. Took it to a lunch presentation at school today, and everyone loved it! The recipe makes almost twice as much frosting as needed for a 9x13 cake, so I'm putting the rest on an angel food cake (as suggested on the pudding box, which happened to contain the frosting recipe).

Hey theboysmom - you mix the dry pudding mix into the pineapple. DON'T make the pudding first!

How fun to read all your comments about what you call this cake in your neck of the woods! So much more interesting than "Refrigerator Cake" which is what I grew up calling it. You can see why I needed to give it a little charm and pizzaz. Minus the illegal substance, of course.
