Description

Definitely my favorite Christmas cookie this year! They are so festive and cute and taste AMAZING! Try these out for your next holiday treat!

Ingredients

  • 1 cup Almonds
  • ½ cups Flour
  • 1 stick Butter
  • ½ cups Sugar
  • 1 teaspoon Vanilla
  • 1 teaspoon Lemon Juice (preferably Fresh)
  • 1 whole Egg White
  • ¼ teaspoons Salt
  • ½ packages (about 16 Oz. Roll) Store-bought Sugar Cookie Dough
  • ¼ cups Jam (I Used Raspberry, But You Can Use Whatever You Like)
  • Powdered Sugar For Decoration

Preparation

Start by finely grinding almonds in food processor. Slowly add remaining ingredients (besides jam) in the order they are listed and pulse until a dough forms.

Form the dough into 2 balls, wrap with Saran wrap and chill for at least an hour (1 dough ball is for the top of the cookie, the other one is for the bottom).

Preheat oven to 350 degrees.

Once dough has chilled, roll one ball out on a floured surface and use desired cookie cutter to make the bottom of the cookie.

Place on a greased cookie sheet and bake for 15-20 minutes or until golden and firm.

While these are baking, roll out second ball of dough and repeat the process, but use a circular object to make a hole in the center of the cookie.

After all the cookies are baked and have cooled, heat jam for 30 seconds and spread 1 teaspoonful on each bottom half of the cookie.

Line the top halves of the cookies on top of the bottom cookies and sprinkle with powdered sugar.
