3 ingredients to a healthier and tastier fudge!
First of all I would really only recommend using a double boiler for this to really incorporate everything well. I would not at all recommend cooking directly over a stove top or in a microwave.
Line a 5- x 5-inch pan with parchment paper or foil.
Chop the chocolate bar and mash the avocado well. Mix these together with the coconut oil over a double boiler. Stirring constantly allow the chocolate and coconut oil to melt together and then whisk everything together until completely smooth. Remove from heat; if using Stevia go ahead and add it now, stirring to combine.
Using a rubber spatula spread the fudge into the prepared pan. Add any other toppings, if desired and press them into the top.
Refrigerate for 2-3 hours before cutting into it. To cut, run a sharp knife under hot water and slice the fudge into equal pieces. Keep refrigerated when not eating.
Nancy is the Coupon Clipping Cook, which means she not only has an astounding number of recipes to share with us (her TK recipe box is busting at the seams!) but she's also got loads of money-saving tips in her blog (she worked at a grocery store for a number of years, so she knows her stuff). She has some pretty amazing creations, like Roasted Garlic Potato Soup and Nutty Coconut Chicken. Go check them out!
Heather is a Texas native and the blogger behind Heather's Dish. She's mom to Weston, wife to Nate, and they live in Little Rock, Arkansas with their two "stubborn and saucy" dogs Bunker and Keira. In her blog, she shares her photographs, random musings (serious and silly alike), and all kinds of scrumptious recipes---and not just evil variations of her favorite mac and cheese. Her enviable TK recipe box is a testament to that. Go see for yourself!
