Description

I hope there’s only one cowboy in your life because this recipe only makes 1 dozen. I did not create this recipe from scratch. I simply took former first lady Laura Bush’s recipe and halved it. I know we’re encouraged to post original recipes here on TK, but I always like to know if a recipe works when halved and this one does, so I’m sharing it. Hope you enjoy!

Ingredients

  • ¼ cups Plus 2 Tablespoons Unbleached Flour
  • ¼ teaspoons Plus 1/8 Teaspoon Baking Powder
  • ¼ teaspoons Plus 1/8 Teaspoon Baking Soda
  • ¼ teaspoons Plus 1/8 Teaspoon Cinnamon
  • ⅛ teaspoons Kosher Salt
  • 3 Tablespoons Unsalted Butter, Softened
  • 3 Tablespoons Light Brown Sugar
  • 3 Tablespoons White Sugar
  • 1 whole Egg Yolk, From 1 Large Egg
  • 1 Tablespoon Milk
  • ¼ teaspoons Plus 1/8 Teaspoon Vanilla
  • ¼ cups Plus 2 Tablespoons Rolled Oats
  • ¼ cups Plus 2 Tablespoons Chocolate Chips
  • ¼ cups Chopped Pecans
  • ¼ cups Sweetened, Flaked Coconut

Preparation

Preheat oven to 350°. In a small bowl, whisk together flour, baking powder, baking soda, cinnamon and salt. In another bowl, beat the butter with an electric mixer for about 1 minute to loosen it up. Add the sugars and beat another 2-3 minutes until the sugar is well incorporated and the mixture is fluffy. Next, add the egg, milk and vanilla and continue to blend. Finally add the flour mixture and beat until the dough just comes together. Stir in the oats, chocolate chips, pecans and coconut by hand. Chill this mixture in the fridge for about 1 hour. Divide the dough into 12 balls and bake on a cookie sheet lined with parchment paper for 13-15 minutes until browned. Let cool on cookie sheet 1 minute, then move to a wire rack for cooling.
