Melt butter in a medium/large sized sauce pan over medium heat. Once butter is melted, toss in the diced cloves of garlic and let them cook for about 30 – 60 seconds.
Pour in ketchup, honey and soy sauce and stir together. Bring to a boil, stirring frequently.
Reduce heat and cover; let cook for roughly 5 minutes.
While the sauce is cooking, I make sure my meatballs (generally fully frozen) are ready to go in the crockpot. When the sauce is finished I pour it over the meatballs, put the lid on and cook on high for about 1 1/2 to 2 hours, stirring occasionally. I then turn my heat to low for 30 minutes and then to warm when I’m ready to serve.
However, if your meatballs are ready to go, throw them into the pot with the sauce and let them cook together for sereral minutes on medium low to low heat.
Garnish with some diced green onion and serve over rice.
Tip: The sauce is delicious when sopped up with bread!
