Place the strawberries in a food processor and pulse until coarsely chopped. Pour chopped strawberries in a medium saucepan. Add sugar, lemon slice, vanilla extract and sea salt.
Cover and cook over medium heat for 4 to 5 minutes, stirring occasionally. Sugar will melt and the berries will soften and release some of their liquid. Uncover. Lower flame. Simmer until the berries fall apart and mixture is thickened and is no longer watery, 12 to 15 minutes. Remove lemon peel.
Ladle the mixture into a glass jar. Enjoy warm or cool.
TO STORE: Cool to room temperature, cover and refrigerate up to 2 weeks.
Makes approximately 1 1/2 cups.
