Description

Spring basil pesto with peas, scallions, walnuts, lemon, garlic and olive oil. Pine nut and Parmesan-free!

Ingredients

  • 1-½ cup Basil Leaves
  • 3 cloves Garlic
  • ¼ cups Walnuts
  • ⅓ cups Extra Virgin Olive Oil
  • ½ cups Scallions, Roughly Chopped
  • ¾ cups Green Peas, thawed if frozen
  • ½  Lemon, Juiced
  • ¼ teaspoons Salt

Preparation

Combine all ingredients in a food processor and blend until smooth. Adjust lemon and salt to taste. If adding olive oil for a smoother pesto, add 1 tablespoon at a time and pulse mixture in between.

Enjoy on pasta, toast, fish, chicken, veggies, pizza, anything!
