Description

A smoky, spicy, sweet sauce that’s awesome on just about anything!

Ingredients

  • 1 Tablespoon Olive Oil
  • ½ cups Diced White Or Yellow Onion
  • 2 teaspoons Minced Garlic
  • 2 teaspoons Canned Chipotle Chilies In Adobo Sauce, Chopped
  • 2 pints Fresh Raspberries, Rinsed
  • ½ cups Raspberry Vinegar (Recipe For Homemade Included Below)
  • ¾ cups Sugar
  • ½ teaspoons Salt

Preparation

In a medium saucepan, heat the oil over medium heat. Add the onions and cook until slightly caramelized. Add the garlic and continue cooking for one minute. Add chipotles, cook for one minute (stir continuously). Add the raspberries and cook until soft. Add the vinegar and stir to deglaze the pan. Then add sugar and salt, and bring the entire mixture to a boil. Reduce heat and simmer until thickened, about 8-10 minutes, stirring occasionally. Remove from heat and allow to cool.

This sauce is amazing on everything from pork to roast beef sandwiches, or use it as a dip with cream cheese.

Recipe for homemade raspberry vinegar: 1 1/2 cups white vinegar, 1/2 cups sugar, 1 cup raspberries. Combine sugar and vinegar in a saucepan and heat to not-quite-boiling. Pour into a glass bowl and stir in raspberries. Cover with plastic wrap and allow to sit for about a week, then strain through cheesecloth.
