Description

The one and only spaghetti sauce. Tomato Perfection.

Ingredients

  • 1 Tablespoon Olive Oil
  • ½ whole Onion, Chopped
  • 2 cloves Garlic, Minced Or Chopped
  • 28 ounces, weight Canned Tomato Sauce
  • 14-½ ounces, weight Canned Italian Style Diced Tomatoes
  • 8 ounces, weight Canned Tomato Paste, Between Half And All Of The Can
  • Italian Seasonings To Taste
  • 1 dash Cayenne Pepper (Optional)
  • 1 pinch White Sugar, A Very Generous Pinch
  • Salt And Black Pepper To Taste
  • 8 ounces, weight Sliced White Mushrooms
  • Fresh Snipped Parsley For Garnish

Preparation

In a large sauce pan, saute the onions and garlic in olive oil over medium heat until tender and fragrant. This will take about 2-3 minutes.

Then pour in the tomato sauce, diced tomatoes and paste. Rinse cans with a little water and add it to the pan. Stir to combine. Season with seasonings of choice, black and cayenne peppers, sugar and salt. Taste and adjust if needed.

Let it simmer. The longer the better. This sauce can be ready to serve as soon as it’s heated through, however if I have the time, I like to let it simmer on low for a couple of hours, stirring occasionally.

Just a few minutes before serving, add in mushrooms and some parsley. Stir, let cook a few minutes until ‘shrooms are tender. Garnish with more parsley and serve over hot pasta.
