Description

Mojo verde (translated from Spanish as “green sauce”) is traditionally made of cilantro, olive oil, sea salt, garlic and cumin. This 5-minute condiment is so versatile, it goes well with almost everything: roasted vegetables, potatoes (especially potatoes!), fresh bread, fish, soups, salads, beans … If you decide to throw a Canarian party, I bet this sauce will disappear within minutes.

Ingredients

  • 1 bunch (large Bundle) Cilantro (or Parsley) Leaves, Stalks Removed
  • 3 cloves Garlic
  • ⅓ cups Sunflower Seeds (optional)
  • ½  Lime, Juiced
  • ½ teaspoons Cumin
  • 1 teaspoon Sea Salt
  • ½ teaspoons Black Pepper
  • ¾ cups Extra Virgin Olive Oil
  • Fresh Bread, Potatoes, Roasted Vegetables Or Fish To Serve

Preparation

Blend cilantro (or parsley), garlic, sunflower seeds (optional), lime juice, cumin, sea salt and black pepper with a food processor or blender. Gradually add oil until you like the consistency. Serve with fresh bread, potatoes, roasted vegetables or fish. Enjoy!

If you want to preserve this, boil jars in water for 15 minutes, cool them, then pour the green sauce in with 1 tablespoon of olive oil on top. That way, you can store it in the fridge for a few weeks. If you want to store it longer, simply freeze it.
