Description

Pork tenderloin is a loverly cut of meat and with this marinade, it adds incredible flavour. This marinade is not only easy to do, it takes very little time to bring out that great taste.

Ingredients

  • 1 teaspoon Fennel Seeds
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Thyme
  • 3 cloves Garlic
  • 2 teaspoons Smoked Paprika
  • 2 whole Limes, Zest And Juice
  • 1 Tablespoon Tomato Ketchup
  • 1 Tablespoon Honey
  • 2 Tablespoons Balsamic Glaze
  • 2 pinches Salt And Pepper
  • 1 whole Filet Pork Tenderloin

Preparation

Place fennel, cumin and thyme into pestle and mortar. Add garlic cloves and pound until crushed. Add smoked paprika, lime zest and lime juice. Stir.

Combine with ketchup, honey and balsamic glaze and stir to fully combine. Season with salt and pepper.

Spoon 2/3 of the marinade onto the pork. With your hands, rub marinade all over the pork and put in the fridge to marinate overnight.

When ready to cook, preheat oven to 180ºC (355ºF).

Place pork onto a baking tray. Spoon on the rest of the marinade over the pork and put in the oven. Cook for 45–60 minutes or until pork is fully cooked.
