Garlic Scape and Basil Pesto

I was excited to see garlic scapes in my CSA box, but I had no idea what to do with them. Some online research lead me to pesto, and this is, in my opinion, one of the best pestos I have made.

This is a pantry staple for me—rub on grilled vegetables, use as a spread on sandwiches, mix with vegenaise as a dip, use as a base for pasta salad or potato salad. It’s briny, lemony and delicious!
