Description

I don’t let any food go to waste. Given the high cost of groceries, and the innate guilt of throwing out food when so many people go without, I make sure to utilize every scrap until it’s gone. I was given some Golden Delicious apples that were past their prime and on the way to mushville, but I wasn’t about to let these go to waste. The aroma of cooking apples with vanilla and cinnamon is as comforting as a baking apple pie.

Ingredients

  • 6 whole Apples
  • ⅔ cups Water
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Lemon Juice
  • ½ teaspoons Cinnamon

Preparation

Peel and chop up the apples. In a slow cooker, add apples, water, vanilla, lemon juice, and sprinkle in cinnamon.

Set on HIGH for 3 hours. Once cooked, puree with an immersion blender or hand mash with a potato masher for a chunkier texture. The lemon juice will keep it from browning, and this will store in the fridge for 1 week. You can also freeze this.
