Description

A creamy, luscious, garlic and herb cheese spread that can be used as a base for canapés, as a dip, a sandwich condiment, or just about anything you can think of.

Ingredients

  • ¾ teaspoons Salt, Or To Taste
  • 1 clove (Large) Garlic
  • 8 ounces, weight Cream Cheese, Softened
  • 8 ounces, weight Mascarpone Cheese
  • 1 Tablespoon Unsalted Butter, Softened
  • 2 Tablespoons Extra Virgin Olive Oil
  • Freshly Ground Black Pepper
  • ½ cups Chopped Parsley
  • 1 Tablespoon Fresh Tarragon Leaves
  • 3 Tablespoons Fresh Chives, Coarsely Chopped

Preparation

In the bowl of a food processor, add salt, then press the garlic on top of the salt. Pulse until just combined.

Add cream cheese, mascarpone, butter, and olive oil. Process for 1–2 minutes until combined and creamy.

Add a couple of grinds of black pepper, and then the herbs and process for another 2 minutes.
Transfer to a glass bowl and chill for at least 1 hour before use.

Notes:
1. Use as a base for canapés and hor d’oeuvres, as a sandwich spread, or in any variety of ways.
2. This spread can be assembled in 10 minutes or less, but it will require at least an hour for chilling, so keep that in mind as you prepare it.
