In a large saucepan add water, cranberries, orange zest, orange juice and 1/4 cup sugar. Place over medium heat. Bring to a boil, cover and simmer for 20 minutes or until cranberries have softened, stirring occasionally.
With the back of a large spoon, smash the cranberries then add lemon juice and remaining sugar. Stir to combine. Taste test it to see if you want to add more sugar. Leave uncovered and simmer for 30 minutes or until thickened, stirring occasionally.
Spoon into jars or resealable containers, leave on the counter to cool. Then put the lid on and refrigerate for up to 1 month.
