Description

This authentic Greek salad dressing is terrific on salads or as a marinade for chicken, pork, or beef. Stores well in the fridge, as well.

Ingredients

  • ½ cups Extra Virgin Olive Oil
  • 2 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Sun-Dried Tomatoes, Chopped
  • 2 Tablespoons Kalamata Olives, Chopped
  • 1 teaspoon Spice Islands Garlic And Herb Seasoning, From A Grinder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Sea Salt
  • 1 teaspoon Freshly Ground Black Pepper

Preparation

I make the dressing in a small Mason jar. It’s just the right size, it’s great for shaking briskly and the flavors don’t seep into the glass like they do with plastic.

Put the olive oil into the jar and add the balsamic vinegar. Add lemon juice, sun-dried tomatoes and olives. Next, grind 1 teaspoon of the Spice Islands grinder into the jar. Add the onion powder, oregano, sea salt and black pepper. Shake vigorously. The contents will settle so you should always shake well before serving.
