Roasted Sweet Potato and Chorizo Lettuce Wraps

by Natalie (Perry's Plate) and filed in Low Carb, Special Dietary Needs

Roasted bits of sweet potato and corn are mixed with spicy chorizo and nestled in a lettuce leaf. A drizzle of cilantro cream and a sprinkle of feta cools things down. My whole family loved these!

Not Your Traditional Caesar Salad

by Tina and filed in Low Carb, Special Dietary Needs

Traditionally Caesar dressing is rich and calls for anchovies, which are loaded with sodium. My version uses kipper (herring) which still has that salty fish yummy flavor but without the sodium. Also, since I leave the fish chunky, the protien works as a meal.
