I leave the skins on them, because Maude tells me to, but you should follow your instincts on that one. No hum drum mashed potatoes here! These babies are sliced and grilled for a golden caramelized crust, then steamed the rest of the way in red wine. They’re mashed to deliciousness with a healthy dose of roasted garlic, the usual fixings, and then topped with a caramelized onion and mushroom red wine sauce. Yes. It is as good as it sounds.
