Just the best potato salad ever. No big deal.
Do not be fooled by the “healthy” part of this recipe’s title. Our secretary at work has brought this potato salad to office brunches twice and I fell in love with it instantly. It’s creamy and tasty and all the ingredients just happen to be more or less good for you.
Of all the potato salads I know, I like this one the best! It’s very easy and the ingredients are always on hand in my kitchen. Mustard and Old Bay give this salad a pleasant spiciness. A snooty herby French potato salad recipe coming soon!
Potato salad is one of my all-time favorite things. I love it with cold cuts of all meats, steak, fresh corn, warm ham, boiled eggs, cheese. Anything. This is a flavorful, substantial version that’s delicious all on its own.
