Black beans, garbanzos and corn tossed with veggies and a delicious cilantro-lime dressing. We love it as a salsa, but it can also be used as a salad or side dish.

A friend introduced me to this recipe a few years back, and it has become one of my favorite salads to fix as soon as the vegetables start sprouting in the spring! I’d like it for the color alone, but the flavor combination makes it a must on my spring/summer menu.

I can remember that I never really liked bean salad when I was younger. That was until I tried Molly T’s bean salad. Molly was a dear lady and my friend Joette’s mom. I never got the recipe from her, but this is my version. It is one of those recipes that you can make and have in the fridge when you want a cool side salad in the heat of the summer!

No need for a can of beans anymore. A cheap bag of pinto beans and simple ingredients yield better beans. This is a perfect thing to make on the weekends.

This is a tasty salad or dip. I find it better suited to be a salad. However, at one picnic, I saw someone take a corn chip and dig into the salad. So I guess it’s your call as to how you serve it. As a side dish, this will serve 4 or more.
