I LOVE chicken salad. You hand me a creamy, full-fat chicken salad concoction on a buttery croissant and I’m a happy girl, until I remember how much better I feel when I eat healthy! This lightened-up version of chicken salad is so good that my dad couldn’t even tell I used fat-free products. It’s really easy to make and you can add what you like!

A delicious sweet and tangy compilation of fruit, nuts and spinach that’s easy to throw together for a nice change of pace to the usual salad. My three-year-old daughter calls it “Fancy” Salad and then usually picks and eats all the blue cheese and cherries.
