Pimento Cheese Shrimp Salad Sandwiches

Here are two of my favorite Southern foods: shrimp and pimento cheese. This mixture went perfectly on a variation of another Southern favorite: corn English muffins. I knew the second I saw them at the store I had to try them, and their slightly sweet flavor was perfect. This recipe was a huge hit with the family and I know the next time I make this I will be doubling it!

Tuna Melt

May is sandwich month at Carolina HeartStrings and Alessa and I have been making some wonderful combinations. This week I decided to made a tried and true favorite at our house. The Husband and I love a tuna melt. This is such an easy recipe to personalize and it would also be wonderful as a healthy meal option for lunch or dinner served with my apple salad. Delicious!
