This was my Mother’s recipe, and a real comfort food. When the Nabisco Company discontinued Zwieback teething biscuits, a graham cracker crust, although good, was just not the same. Crisper plain biscotti crumbs make a better substitute. (The King Arthur website has a recipe for making Zwieback.)

When I was growing up, my grandpa raised ACRES of zucchini. The grandkids believed there were only two purposes for the existence of zucchini: carve into a boat and float in the cattle water tank, or THIS PIE! So quick, so easy and so yummy, my sisters and I would fight over this pie!

In an effort to eat healthy, I’ve been experimenting with whole wheat flour in my existing recipes. Here is my recipe for a single pie crust. It turned out to be just the right balance of flour. The crust is flaky and has a wonderful nutty flavor from the whole grain.
