Technically, I could also call these Raspberry Cobbler Cupcakes. That’s kind of what they are. You can substitute ANY fruit you have onhand: chunks of pear, cherries, blackberries, blueberries, chunks of apple.
They’re little. And lovely. And sweet.

These cupcakes are a special treat. Light and fluffy, their mild almond taste is a perfect complement to the sweet vanilla buttercream.

This may be the best cupcake ever!!! If you like chocolate, caramel and coconut all combined into a delightful taste of baked goodness this is the one for you. The flavor combination comes from one of my favorite Girl Scout cookies – The Samoa or Caramel deLight.

I made these for a barbeque and they were the perfect finisher! The wonderful combination of cream cheese, peanut butter, and brownies is to die for. The best part is that if you reduce the fat content a bit by using low-fat products, you don’t have to feel too guilty about eating two!

Her enviable TK recipe box is a testament to that. Go see for yourself!
