Gazpacho

Gazpacho is a raw, cold soup—it shouldn’t be considered a cooked tomato soup that’s served cold. No way! Gazpacho is fresh, textured, light, and such a delicious summer treat. I love it more every time I eat it. It just feels good.

Most of the time we think of stuffed mushrooms as an appetizer (which these most certainly can be) topped with lots of cheese and stuffed mostly with breadcrumbs. Mine are stuffed with only veggies and chicken sausage, and topped with crumbled goat cheese.
