		<description><![CDATA[Black bean hummus with roasted shallots and fresh cilantro---delicious with pita chips or on sandwiches!]]></description>
				<content:encoded><![CDATA[<p>Preheat oven to 400 F.</p>
<p>Cut the tip off of the shallot and place on a piece of aluminum foil. Pour olive oil over the shallot and then tightly seal the sides of the aluminum foil to form a ball.</p>
<p>Place the shallot in the oven and roast for about 10 minutes.</p>
<p>Meanwhile, combine the black beans, lime, cilantro, tahini, water, olive oil, garlic, pepper, and spices in a food processor.</p>
<p>When the shallot is finished roasting, add it into the food processor as well and pulse until it reaches a smooth, creamy consistency.</p>
<p>Enjoy!</p>

2. Preheat oven to 350ºF. Coat the pita triangles in the remaining 1 tablespoon olive oil and sprinkle with cinnamon and brown sugar, coating well. Bake for 10 minutes until crisp.</p>

				<content:encoded><![CDATA[<p>Makes 3 cups.</p>
<p>Add all ingredients except the vegetable oil and parsley into a food processor. Pulse a few times to get everything moving, scrape sides of bowl and turn on high. Drizzle vegetable oil slowly through the top opening of the food processor while it’s still running, and blend until smooth. Scrape down the sides often to make sure all is incorporated.  </p>
<p>Transfer into a bowl and fold in parsley. Taste and add additional salt if needed. </p>
<p>Store in a covered container in the refrigerator until ready to serve. </p>

<p>*Note: Due to the saturated nature of coconut milk, this hummus does &#8220;set up&#8221; a bit when refrigerated.  No worries! Just stir prior to serving.</p>
<p>Serve with crudites or pita chips.</p>
