Description

The sweetness of honey and ripe peaches combined with the spices found in peach cobbler? And the convenience of a slow cooker? Yes please!

Ingredients

  • 5 pounds Fresh Peaches
  • 2 cups Sugar
  • ½ cups Honey
  • 1-½ teaspoon Ground Cinnamon
  • ¼ teaspoons Ground Nutmeg
  • ¼ teaspoons Ground Cloves
  • ½  Lemon, Juiced

Preparation

Peel, pit and chop the peaches. In a blender, puree the peaches in batches and add to the slow cooker. Add the sugar, honey, cinnamon, nutmeg, cloves and lemon juice; stir. Cook on low setting 6-8 hours, stirring occasionally, until the butter reaches desired consistency and turns a rich medium brown. Spoon butter into hot, sterilized jars, leaving 1/4 inch headspace. Wipe rims; secure with lids and rings. Process in a boiling water bath for 10 minutes; set jars on a towel to cool. Check for seals after 12-24 hours. Makes about six 8-ounce jars.

Note: The amount of sugar, honey and spices in this recipe can easily be altered to suit your tastes. To me, this is the right amount of sweetness and spices as to not overshadow the fresh peach flavor.
