Description

Pear preserves made with pink champagne. Makes beautiful and delicious gifts!

Ingredients

  • 6 pounds D'Anjou Pears
  • 4 Tablespoons Lemon Juice
  • 2-½ cups Pink Champagne
  • 2-½ pounds Granulated White Sugar
  • 1 box (1.75 Oz. Box) Sure-Jell

Preparation

Peel and dice pears into medium-sized pieces (not too small,not too big). Add pears to a medium-sized heavy bottomed saucepot. Add lemon juice, stir to coat pears. Add champagne and sugar. Bring to a gentle boil, stirring frequently, approximately 1 1/2 to 2 hours until liquid is reduced by roughly half and fruit is translucent. Bring to a full boil stirring constantly. Add pectin, continue to boil for 3 minutes (still stirring constantly!). Pack into hot sterilized jars leaving 1/8 inch headspace. Process in boiling water for ten minutes.

This looks fabulous! I’m always looking for different, yet simple, canning recipes! I’ll have to save this one for next fall’s pear harvest. Unless, of course, I can’t resist and just get some pears for a batch during the holidays! It would be great on a New Year’s morning piece of toast or English muffin!
