This recipe typically yields between 4 and 6 cups of apple butter, depending on the size of your apples. Use a crockpot or slow cooker with at least a 3 quart capacity.
Core apples and cube them into 1 inch chunks. Leave the skin on. Add cubed apples to the crockpot, followed by the rest of the ingredients. Stir a few times to coat the apples evenly with the liquid and spices.
Cover the crockpot and cook apples on low for 12 hours or overnight. The apples should be very soft and a dark brown color when they’re ready. When done, turn off the crockpot and allow the apple mixture to cool for about an hour.
Pour cooled apples and liquid into a blender (or use an immersion blender for this step). Blend until mixture is completely smooth. Let the apple butter cool completely and then store in the fridge for up to 2 weeks. Or feel free to can the apple butter for later use or to be given as gifts. If you do this, follow standard and approved canning practices.
