Description

Delicious with cream cheese and crackers.

Ingredients

  • 1 cup Cleaned And Cored Green Peppers
  • 1 Tablespoon Tabasco
  • 1-½ cup Cider Vinegar
  • 6-½ cups Sugar
  • 1 box Certo, 6 Ounce Box
  • 1 drop Green Food Coloring
  • 6 whole Half-pint Canning Jars, Lids And Rings

Preparation

In a blender place peppers, Tabasco, and vinegar. Blend thoroughly.

In a 6 quart saucepan combine pepper mixture and sugar. Bring to a rapid rolling boil that cannot be stirred down. Remove from heat for 10 minutes. Stir in Certo and food coloring. I add 1 drop for a more ‘natural’ looking green jelly, but you could add up to 3 drops for more of a Christmas presentation.

Seal in hot sterilized jars for 10 minutes.

Makes 6 half pint jars. Perfect for gift giving.

Spread crackers with cream cheese and then green pepper jelly. For a fancier presentation, lay one whole brick of cream cheese on a dish, then pour jelly over the top with crackers on the side.

Also delicious on scrambled eggs and I even used this jelly as a condiment for my roasted pork loin! Yum!!
