Makes about 4 pints depending upon how thick you like your apple butter.
Pile the cored, peeled and sliced apples into a crock pot. Top with sugar and spices. Stir to coat the apples. Turn crock pot on high for 1 hour. Stir at the one hour mark and turn down to low. Cook overnight, or 9-10 hours.
Using a food processer or blender, process the cooked apples until you reach a smooth consistency.
Pour the puree back into the crockpot and cook on high for an additional hour.
Pour into sterilized hot bottles or jars and process them in a water bath for 10 minutes or according to standard canning practices. Let cool and enjoy.
