Description

A great way to start your morning with healthy peanut butter waffles with bananas in the batter.

Ingredients

  • 1-¼ cup Whole Wheat Flour
  • 1 cup All-purpose Flour
  • 4 teaspoons Baking Powder
  • ½ cups Creamy Peanut Butter
  • 1-½ Tablespoon Granulated Sugar
  • 2 whole Eggs, Beaten
  • 2-¼ cups Skim Milk
  • ¼ cups Canola Oil
  • ¼ teaspoons Salt
  • 2 whole Ripe Bananas, Diced

Preparation

In the bowl of an electric mixer fitted with the paddle attachment, combine all of the ingredients.

Preheat a waffle iron. When it is hot, spray its surface lightly with the cooking spray or brush it with the butter.

Fill a medium-size ladle with batter and pour it onto the waffle iron. Cook until the waffle is golden brown and a toothpick inserted into the middle comes out clean, approximately 3 to 5 minutes. Serve hot with sugar-free syrup.

Super tasty! Great for freezing and pulling out for a healthy breakfast or lunch. Goes well with honey, sliced bananas, and even more peanut butter on top. :)

I’m beginning to notice a theme with your recipes – they’re great! :-) These are wonderful – nice and moist. I love that they make a large batch so I can make them and stick them in the freezer for a quick wholesome breakfast. They’re not overly sweet, so they pair nicely with maple syrup.
