Description

Wholesome yummy waffles! I mix the dry ingredients up ahead of time and keep it in the pantry, so all I have to do on any given Waffle morning is throw in the buttermilk , eggs and melted butter. I have even mixed this up with instructions on handmade gift tags, and gave them away for Christmas gifts. My ex-husband loved ‘em so much, he wanted to mass market them. He wasn’t all bad. LOL.

Ingredients

  • ½ cups Pecan Pieces, Toasted Lightly
  • ¾ cups Wheat Flour Mix (Half Whole Wheat And Half Unbleached Wheat)
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 2 teaspoons Brown Sugar
  • ¼ teaspoons Cinnamon
  • ⅛ teaspoons Nutmeg
  • 2 whole Eggs, Whisked
  • 1 cup Buttermilk
  • 2 Tablespoons Melted Butter
  • 1 Tablespoon Vanilla Or Butternut Flavoring, Optional

Preparation

1. Wheat mix: take equal amounts of whole wheat flour and unbleached wheat flour to make the 3/4 cup. You don’t want to use a complete 3/4 cup of whole wheat as it is too heavy for these waffles.

2. Toast pecan pieces lightly!

3. Mix all dry ingredients. In a separate bowl, whisk together the eggs, buttermilk, butter and flavorings.

4. Mix the two together and add pecans.

Preheat waffle iron and start making waffles. I watch it carefully, as we don’t like them overdone. They’ll take about 3 minutes or so, depending on your iron, of course. Enjoy!

Thanks ibmzlorinsc01, I agree! I have made all sorts and kinds of waffles and have to say this is a wholesome flavorful waffle! If you’re truly a waffle person, you can’t go wrong with this one!

Everyone has their own likes and dislikes…however you can’t say these waffles lack flavor …from the whole wheat mix, spices of nutmeg and cinnamon to the toasted pecans (which you left out) you just can’t find a better tasting waffle! I have made this same recipe for 15 years now and have no reason to change…also if you must have any more flavor (as suggested) you can add vanilla or butternut flavoring.

In the interest of time I left out the pecans, but otherwise made this recipe as written. I like my waffles to have a light crunch on the outside with a soft center, but it did not matter how long I cooked these – they stayed soft inside and out, more like a pancake texture. Also, for all of the yummy goodness that went into them, I expected them to be a little more flavorful. They were still good, and my kids enjoyed them, but it’s probably not a recipe I’ll put into my weekly rotation.
