Description

This breakfast, lunch OR dinner takes pumpkin waffles to a whole new level!

Ingredients

  • FOR THE WAFFLES:
  • 2 whole Eggs
  • 2 cups Buttermilk
  • ⅓ cups Plain Pumpkin Puree, No Spices Added
  • ½ teaspoons Pumpkin Pie Spice
  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • 2 teaspoons Baking Powder
  • ½ teaspoons Sea Salt

  • FOR THE CINNAMON SUGAR:
  • ½ cups Organic Sugar
  • 1 Tablespoon Cinnamon
  • _____
  • FOR THE PUMPKIN SPICE WHIPPED CREAM:
  • 1 pint Heavy Whipping Cream
  • 4 Tablespoons Pumpkin Spice Syrup (Torani Brand)

Preparation

Beat eggs, buttermilk and pumpkin together. Add the spice, flour, baking soda, baking powder, and sea salt. Whisk until batter is smooth. Place 2/3 of a cup on pre-heated waffle iron and let cook until golden brown.

Combine sugar and cinnamon in a bowl for the cinnamon sugar. Set aside.

For the pumpkin spice whipped cream, whip whipping cream and syrup together until peaks start to form. Keep chilled.

Serve warm waffles with cinnamon sugar and whipped cream.

The waffles were tasty. I didn’t feel like they tasted very much like pumpkin, but my son thought they did.

Loved this! It was the perfect dinner on this wonderful fall evening. Just the right amount of batter for the 4 of us. I didn’t make the whipped cream, but they were so delicious even without it! Some lightly drizzled maple syrup while others chose to sprinkle on a little cinnamon sugar. Thank you so much for posting these yummy waffles! =)
