Description

I love pumpkin! Pumpkin pie, pumpkin bars, pumpkin cheesecake. Pretty much pumpkin anything is fine by me.

Because we always grow a lot of pumpkins.

Because I can eat quite a bit of pumpkin.

Because I can sneak some vegetables into breakfast food, I came up with this waffle recipe that’s become a real hit with the Things and Mr. Wonderful.

Ingredients

  • 4 cups Flour
  • 2 teaspoons Baking Soda
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • ½ cups Brown Sugar, Packed
  • 1 teaspoon Cinnamon
  • 1 teaspoon Pumpkin Pie Spice
  • 2 cups Solid Pack Pumpkin
  • 1 cup Butter, Melted
  • 3 cups Buttermilk
  • 6 whole Eggs
  • 2 teaspoons Vanilla
  • ½ cups Chopped Pecans

Preparation

In a large bowl, mix together all dry ingredients. Add pumpkin, melted butter, buttermilk, eggs and vanilla. Mix well. Fold in chopped pecans. Pour into preheated waffle iron and close the lid. When steam stops rising from the waffle iron, waffles are done. Serve warm with butter and syrup or a dusting of powdered sugar.

Quick notes: substitute 2 tablespoons lemon juice mixed into milk if buttermilk is not available. Also makes great pancakes.

Wonderful waffles! Didn’t have pecans, so chopped up hazelnuts and sprinkled them over batter prior to baking. A bit heavier waffle – translate to more filling. Allowed to bake until done – to ensure that pumpkin gets cooked.

Made this for a large family brunch and everyone loved- it was a nice change from plain waffles.

These are really good spice waffles. My family and I enjoyed them very much. We were disappointed that they didn’t taste like pumpkin at all though. (I used a 15 ounce can of pumpkin and didn’t make any modifications to the recipe.) I will make this again though, as we liked it anyway. :-)

These were so yummy! I actually only made half the recipe. I also added a sprinkle of nutmeg. My son and husband loved them!
