Description

These cinnamon and brown sugar glazed apples are fried up in butter, then topped over peanut butter-infused waffles, making for perfect harmony! A new kid favorite!

Ingredients

  • FOR THE WAFFLE BATTER:
  • 2-½ cups Whole Wheat Flour
  • 1 Tablespoon Baking Powder
  • ¼ teaspoons Sea Salt
  • ½ cups Creamy Peanut Butter
  • 3 Tablespoons Honey
  • 2 whole Eggs
  • 2 cups Milk
  • ¼ cups Olive Oil
  • 1 teaspoon Pure Vanilla Extract

  • FOR THE TOPPING:
  • 8 Tablespoons Unsalted Butter
  • 4 whole Medium-sized Red Apples, Each Cut Into 16 Wedges
  • ⅔ cups Sucanat (or Brown Sugar)
  • 2 teaspoons Ground Cinnamon
  • ⅔ cups Chopped Walnuts
  • Pure Maple Syrup, Warmed, To Serve
  • Whipped Topping, To Serve

Preparation

To make the waffles, combine flour, baking powder, and salt in a large bowl; set aside. In another bowl whisk together peanut butter, honey, eggs, milk, oil, and vanilla until well blended. Pour wet ingredients into flour mixture and stir until combined.

Heat a waffle maker and spray with nonstick coating. Pour 1/3 cup of batter per serving (may vary depending on the size of waffle maker). Cook for 2–3 minutes, or until golden brown.

Topping:
In a large skillet, heat the butter. Once melted, add apple slices. Cook on medium heat for 5 minutes, turning often. Sprinkle sugar and cinnamon over apples; stir to coat well. Cook an additional 5–7 minutes, or until fork-tender. Stir in walnuts the last few minutes of cooking.

Serve apple mixture over waffles and top with warm maple syrup and a dollop of whipped topping.

Oh my goodness we had these for dinner Saturday night and they were AMAZING!!!! We made the whole recipe and then warmed up the leftovers in the toaster for snacks the next day. Thanks so much for sharing this awesome recipe.
