Description

A new waffle iron and a passion for savory waffles lead me to create these Cheddar Herb Cornbread Waffles. Perfect with soup for dinner or as a savory breakfast!

Ingredients

  • ¼ cups Vegetable Oil
  • 6 whole Eggs
  • 1 cup Milk
  • 2 Tablespoons Sugar
  • 1 cup Flour
  • 1-½ cup Cornmeal
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • ½ cups Shredded Cheese
  • 2 Tablespoons Fresh Herbs, Minced

Preparation

1. In a large bowl whisk together the oil, eggs and milk. In a separate bowl combine sugar, flour, cornmeal, baking powder and salt.

2. Add the dry ingredients to the wet and mix till just combined. Stir in shredded cheese and herbs.

3. Preheat your waffle iron and cook batter according to manufacturer’s instructions.

4. Serve immediately. Reheat any leftover waffles in the toaster oven.
