Description

These are my version of the so-called natural store-bought bars. They contain no sugar or sugar substitutes, allowing the natural fruity sweetness to shine, and the nuts add creaminess.

Ingredients

  • ½ pounds, ⅞ ounces, weight Oatmeal
  • 3-⅝ ounces, weight Pitted Dates
  • 3-⅝ ounces, weight Dried Apricots
  • 1-½ ounces, weight Natural Raisins
  • ½ cups Fat-free Plain Yogurt
  • 1-⅞ ounces, weight Natural Cashew Butter
  • 4 ounces, fluid Water

Preparation

Whisk together the yogurt and nut butter. When whisked well, add the water and whisk again. Finely chop the fruit, then add the fruit and oats to the yogurt mixture. With damp hands, combine well then firmly pack into a 9 by 9-inch baking tray. Bake for 25 minutes at 350 degrees Fahrenheit. Cut them into 16 squares with a sharp knife.

These will keep in the fridge for 10 days.

did you tightly pack them in to the baking tray? they need to be really packed down before baking and then stored in the fridge where they do firm up, i always use silicone bakeware so i have never had a problem with burning, regular glass or metal bakeware tends to get hotter then silocone maybe try baking them at a slightly lower temp, perhaps at 325 or take them out 5 minutes early. made exactly as the recipe states they are 128 calories.

This are very easy to make but perhaps I did something wrong – they are burned around the edges but falling apart in the middle after 30 mins cooking at 350 F. They also seem a bit soggy, but maybe they’ll firm up when they cool down.

In case anyone cares about that sort of thing, I calculate them to be 500 kJ a square (about 120 calories), so two or three should be about the right amount for a hearty breakfast (i.e. the equivalent of what I’d usually eat – a couple of pieces of toast and an apple or banana).
