Description

French Toast brunch extraordinaire. A hot buttered spinach and cheese eggy bread with melted brie for a touch of luxe.

Ingredients

  • 2 whole Farm Fresh Eggs, Beaten
  • 2 slices Whole Wheat Or Grain Bread
  • 1 Tablespoon Butter
  • 1 dash Olive Oil
  • 2 slices Cheese
  • 1 piece Brie
  • 2 cups Spinach
  • Salt And Pepper, Each

Preparation

Put the beaten eggs into a plate or shallow dish. Place the bread slices into the beaten eggs and turn them over after 3 minutes. Make sure that the bread soaks up the egg mixture well.

While this is happening, heat a little olive oil and butter in a non-stick frying pan on a low to medium heat. Once the oil is hot and the bread is well soaked, add the slices of bread to the pan. Gently fry the slices of French toast in the pan until golden and bubbling on each side.

Meanwhile preheat the oven to 150 degrees C. Once each of the bread slices is thoroughly cooked through, place them each on an oven safe plate or dish. Top each piece of bread with a slice of cheese and a little of the brie and place in the oven to keep warm.

Add a little butter to the already hot frying pan and add the spinach. Gently toss the spinach in the melted butter until wilted and hot.

Carefully (with oven gloves) remove each plate from the oven and top with the spinach. Add salt and pepper to taste.

Serve hot and be ready for applause.

LUXE TIP:
As you can see from the photos on the related blog link, we served our breakfast with a simple juicy ruby-red grapefruit salad sprinkled with a little caster sugar.

HUNGRY MAN TIP:
Serve with slices of crispy fried smoky or maplewood bacon or smoked salmon.
