Special brunch meal for the Easter holiday! Or perfect for a relaxing brunch at home.
In a shallow dish, mix the egg, soy milk, and cinnamon together until throughly combined.
Spread the peanut butter on 1 slice of the bread. Place the banana slices over the peanut butter in a single layer. Sprinkle the chocolate chips over the bread, pressing it into the banana and peanut butter.
Place the second slice of bread on top and push down so everything is sandwiched together.
Soak the sandwich for 2-3 minutes each side in the egg-milk mixture.
Melt the butter in a skillet over medium heat. Cook French toast sandwich for 2-3 minutes per side or until golden brown.
Serve with maple syrup and strawberries.
