Description

A coconut twist on the traditional peaches ‘n cream oatmeal combination.

Ingredients

  • FOR THE OATMEAL:
  • ½ cups Rolled Oats
  • ¼ whole Small Banana, Chopped
  • ½ Tablespoons Chia Seeds (optional)
  • ¼ teaspoons Cinnamon
  • ⅛ teaspoons Nutmeg
  • 1 pinch Salt
  • ½ teaspoons Vanilla Extract
  • ⅓ cups Milk
  • ⅔ cups Coconut Milk From A Can
  • 1 teaspoon Agave
  • 1 Tablespoon Vanilla Whey Protein Powder (optional)
  • 1 cup Peaches, Chopped And Divided
  • FOR THE ICING:
  • ½ Tablespoons Coconut Butter
  • 1 Tablespoon Coconut Milk From A Can

Preparation

For the oatmeal: Combine all ingredients except 1/2 cup of the peaches in a small sauce pan. Cook over medium heat for 5-7 minutes, stirring frequently until oatmeal thickens. Pour into serving bowl and top with remaining peaches.

For the icing: Combine coconut butter and coconut milk in a small bowl. Heat in microwave for 15 seconds and stir together. Drizzle icing on top of oatmeal.

A tasty, healthy version of peaches’n’cream! Great idea, Gina, thanks for sharing! I loved mine with just a pinch of brown sugar in it, trying to get the desired sweetness without totally ruining the “healthy” part.
