Description

Baked little pancake bites. Perfect for dipping!

Ingredients

  • 3 cups All-purpose Flour
  • 1 Tablespoon Baking Powder
  • 3 Tablespoons Sugar
  • ¾ teaspoons Salt
  • 2-½ cups Milk
  • 1 Tablespoon White Vinegar
  • 2 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 4 Tablespoons Butter, Melted
  • Blueberries (optional)
  • Warm Syrup, For Serving

Preparation

Preheat the oven to 425 degrees. (**See note below.)

Sift together flour, baking powder, sugar, and salt. Set aside.

Stir together the milk and vinegar and let it sit for 1 minute. Whisk in eggs and vanilla.

Combine dry ingredients and wet ingredients, then stir in melted butter. If batter is too thick, stir in a little milk.

Spray a mini-muffin pan generously with baking spray. Fill cups 2/3 full. If using blueberries, drop 2 to 3 blueberries into each cup.

Bake for 8 to 9 minutes, or until golden brown on top. Let sit in the pan for 1 to 2 minutes, then turn them out of the pan. (Use a small knife if any are stubborn.)

Serve warm with warm syrup!

**425 will result in crisper edges. For a softer muffin, bake at 400 for 11 minutes.

I’ve made these 4 times in about 3 weeks, freezing any extras for a quick breakfast. Made a double batch this morning, hoping they’ll last through the week. We like them best with blueberries.

I made these for dinner tonight. There are only two of us, so I cut it in half. For future reference, “4 servings” = 2.5 dozen mini muffins. I did not have fresh berries, so I made one dozen with chocolate chips, one dozen with pieces of chopped up bacon, and left the rest just plain. We ended up eating all the two dozen flavored ones as they were not all that filling. (I’m sure I don’t want to look up the calorie count for that.) I should have had some scrambled eggs or some other protein to go with it for satiety. We both independently decided we liked the bacon ones best, which surprised both of us chocolate lovers! It was nice to have something different for dinner, and it is the first time in my life I’ve done the “pancakes for Fat Tuesday” which is apparently a national tradition I’ve never noticed for the past 41 years. :)
