Description

This recipe comes courtesy of Rob Wolf, a Paleo expert. One of my favorite things about the Paleo Lifestyle is how easy it makes cooking. So fewer ingredients and you almost always have them. There’s a debate about whether pure maple syrup is technically allowed for a topping but these taste good enough without it.

Ingredients

  • Coconut Oil, For Cooking
  • ½ cups Almond Butter
  • 2 whole Eggs
  • ½ cups Unsweetened Applesauce
  • ½ teaspoons Cinnamon
  • ½ teaspoons Vanilla Extract

Preparation

Grease the skillet with coconut oil over medium-high heat (6 on my stove). Beat all of the ingredients together in a bowl. Use ladle to pour out each pancake on the skillet. Give each side about 2 minutes.

I love these! A staple as you are switching to the Paleo diet for sure. I have made them this way, but also have used a couple table spoons of almond meal instead of the almond butter…I have also used coconut flour too…Also, instead of the applesauce I’ve used a grated apple or a mashed banana or zucchini and carrots…cinnamon is a great add in too!

This recipe can be varied in so many different ways…glad you posted it here

This recipe can be tweaked in so many ways depending on what you have on hand. Made this way, they are fantastic. Make a bunch ahead of time and you have easy, quick, handy snacks to grab throughout the week. My kids like them made with banana (instead of applesauce) best! No syrup needed, especially with the banana…
